Salmon and Shrimp Alfredo

Ingredients:

  • 8 oz fettuccine pasta
  • 2 tablespoons olive oil
  • 2 salmon fillets, skin removed and cut into chunks
  • 1 cup shrimp, peeled and deveined
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tablespoon butter
  • Salt and pepper to taste
  • Fresh parsley, chopped, for garnish

Directions:

  1. Cook the fettuccine pasta according to the package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add salmon and shrimp, seasoning with salt and pepper. Cook until the seafood is just done, about 4-5 minutes. Remove seafood from the skillet and set aside.
  3. In the same skillet, melt butter and add minced garlic. Sauté for 1 minute until fragrant.
  4. Add heavy cream and bring to a simmer. Reduce heat and stir in grated Parmesan cheese until the sauce thickens.
  5. Return the cooked seafood to the skillet with the sauce. Toss to coat evenly.
  6. Serve the seafood and sauce over the cooked fettuccine. Garnish with chopped parsley.
